Small-Batch Cinnamon Swirl Quick Bread
Makes: 1 small loaf (about 4 servings)
Ingredients:
1 cup all-purpose flour
1 tsp baking powder
¼ tsp salt
½ cup granulated sugar, divided
½ cup milk (whole or 2%)
1 egg
2 tbsp melted butter
1 tsp vanilla extract
1 tsp ground cinnamon
Instructions:
1. Preheat oven to 350°F (175°C). Grease and flour a 5x3-inch mini loaf pan.
2. In a small bowl, whisk together flour, baking powder, salt, and ¼ cup of the sugar.
3. In another bowl, whisk milk, egg, melted butter, and vanilla until smooth.
4. Pour wet ingredients into dry and stir just until combined.
5. In a separate small dish, mix remaining ¼ cup sugar with cinnamon.
6. Pour half the batter into prepared pan. Sprinkle half the cinnamon sugar on top. Add remaining batter, then finish with the rest of the cinnamon sugar. Swirl gently with a knife.
7. Bake 25–30 minutes, or until a toothpick comes out clean.
8. Cool slightly before slicing. Best enjoyed warm, with a cup of something cozy.
